French bean fry (diabetic)

Ingredients
French beans - 200 gms (chopped into inch sized pieces)
Onion - quarter of a piece (finely chopped)
Green chilly - 1 (slit lengthwise)
Curru leaves - 4 leaves (chopped)
Oil - 1 tsp
Mustard seeds - 1/2 tsp
Aesaphetida - 1/4 tsp
salt to taste

Method of preparation
1. Steam the beans until cooked. (about 3 minutes in a microwave)
2. Heat oil in a wok and add mustard seeds and let them splutter.
3. Add the aesaphetida followed by the chopped onions, green chilly and curry leaves.
4. Saute till the onions turn translucent.
5. Add salt to taste.
6. Add the steamed beans and mix well.
7. Serve hot with rice and curry.
Variation - you can add egg white from one egg in the end and saute for a totally different taste.
