Alright, this is one of my all-time favorite side dishes. It goes very well with sambar rice, rasam rice, curd rice, or any kind of variety rice. If you are anything like me, you would enjoy it with just hot plain rice.
You may try this recipe with only drumsticks or only brinjal too. (the picture I'v posted is made with just brinjal)
Ingredients:
Muringakkai (Drumsticks) - 2 nos
(chopped to about 3" long pieces)
Purple Brinjal - 1/4 kg
(chopped lengthwise about 1/2" thickness)
Red onion (large) - 1 no
(finely chopped)
Green chilies - 4 nos (slit)
Curry leaves - 1 sprig
Tomato (large) - 1 no (diced)
Garlic cloves - 4 to 5 nos
(crushed with skin)
Chili powder - 1 tsp
Coriander powder - 1/2 tsp
Turmeric powder - A pinch
Salt to taste
Mustard seeds - 1/2 tsp
Cumin seeds (Jeerakam) - 1/2 tsp (optional)
Oil for frying
Method of preparation:
1. Heat 2 - 3 tsp of oil in a pan.
2. Splutter mustard seeds followed by cumin seeds.
3. Add the finely chopped onions, slit green chilies, crushed garlic and curry leaves.
4. When the onions start turning brown, throw in the diced tomatoes.
5. When tomatoes turn pulpy add chili powder, coriander powder, turmeric powder and salt to taste.
6. Add the drumsticks and pour just enough water to cover the vegetables.
7. Cook covered stirring every now and then.
8. When the drumsticks are almost done, add the brinjal pieces and cook covered.
9. Check for salt and spices.
10. Once all water evaporates and the veggies are nicely fried, remove from fire.
