Ingredients:
Diced chow-chow – 2 cups
Channa dhal – ½ cup
Salt to taste
For seasoning:
Oil - 2 tsp
Mustard seeds – ¼ tsp
Curry leaves- 1 sprig
For grinding:
Red chillies – 6
Cumin seeds – ½ tsp
Urad dhal - 1 tsp
Fresh Grated Coconut – ¼ cup
Fry the above items (except coconut) in a little oil and grind with the freshly grated coconut to a fine paste.
Method of Preparation:
• Scrape the outer skin and dice the veggie into cubes.
• Cook it along with the channa dhal in just enough water till dhal becomes just soft to touch (2 whistles in cooker).
• Add the ground paste, salt to taste and cook till the curry becomes thick.
• Heat oil in a wok, add the seasonings and mix with the koottu.
• Serve with rice.
:- you can make this koottu using other vegetables like white pumpkin, snake guard or raddish.
